Grilled Fruits with Palm Sugar

  • 25 g (1 oz) palm sugar
  • grated rind and juice of 1 lime
  • 2 tablespoons water
  • ½ teaspoon cracked black peppercorns
  • 500 g (1 lb) mixed prepared fruits, such as pineapple or peach slices or mango wedges
  • cinnamon or vanilla ice cream
  • lime slices

Put the sugar, lime rind and juice, measurement water and peppercorns in a small saucepan and heat over a low heat until the sugar has dissolved. Plunge the base of the pan into iced water to cool.

Brush the cooled syrup over the prepared fruits and cook under a preheated hot grill for 6–8 minutes on each side, or over a preheated hot gas barbecue or the hot coals of a charcoal barbecue, for 3–4 minutes on each side until charred and tender.

Serve with scoops of cinnamon or vanilla ice cream and lime slices.
