Griddled Peaches and Apricots with Honey Yogurt

  • 2 tablespoons vanilla sugar
  • 3 peaches, halved, stoned and cut into quarters
  • 4 apricots, halved and stoned
  • 200 g (7 oz) fat-free Greek yogurt
  • 2 tablespoons clear honey
  • Place the sugar in a large bowl, then add the fruit and toss gently to coat.
  • Preheat a griddle pan until hot, then add the peaches, cut side down, and griddle over a medium heat for 2–3 minutes until caramelized, then add the apricots. Turn over the peaches and cook for a further 2–3 minutes or until the apricots and peaches are soft.
  • Meanwhile, place the yogurt in a bowl and pour over the honey. Stir to create a rippled effect. Serve the warmed griddled fruit with the honey yogurt.
