Green Lentil Tapenade with Toast

  • 250 g (8 oz) ready-to-eat green Puy lentils, rinsed and drained
  • 2 tablespoons black olive paste
  • 1 tablespoon caper paste or capers, rinsed, drained and finely chopped
  • 1 tablespoon lemon juice
  • 50 g (2 oz) ready-to-eat slow-roasted tomatoes (not in oil)
  • 2 tablespoons toasted pine nuts
  • 1/2 teaspoon hot smoked paprika
  • salt and pepper
  • hot toast, to serve
  • Place all of the ingredients in a food processor or blender and pulse to blend until smooth.
  • Scrape into a bowl and serve spread over hot toast.
