Meals and Courses

  • 1 lime, roughly peeled
  • 1 large tomato
  • 1 cucumber, roughly chopped
  • 1 yellow pepper, cored and deseeded
  • 2 garlic cloves, chopped
  • 1 avocado, peeled and stoned
  • 6 spring onions, trimmed and roughly chopped
  • 15 g (½ oz) mint
  • 100 g (3½ oz) natural yogurt
  • 8 ice cubes
  • 2 tablespoons extra virgin olive oil
  • chopped chives, to garnish

Juice the lime with the tomato.

Transfer the juice to a food processor or blender, add the cucumber, yellow pepper, garlic, avocado, spring onions, mint and yogurt and process until nearly smooth. Chill until cold.

Ladle the soup into bowls, add a couple of ice cubes to each bowl, drizzle with extra virgin olive oil and garnish with the chopped chives.
