Green Beans with Almonds

  • 1 teaspoon Dijon mustard
  • 2 tablespoons white wine vinegar
  • 1 shallot, finely chopped
  • 3 tablespoons olive oil
  • 500 g (1 lb) green beans
  • 2 tablespoons toasted slivered almonds

Mix together the mustard and vinegar in a bowl. Add the finely chopped shallot, and leave to stand for 10 minutes, then whisk in the oil.

Trim and blanch the beans, then toss them in the dressing and serve in a salad bowl topped with the slivered almonds.
