  • 75 g (3 oz) butter
  • 100 g (3½ oz) golden caster sugar
  • 75 g (3 oz) soft light brown sugar
  • 1 egg, beaten
  • 150 g (5 oz) brown rice flour, plus extra for dusting
  • ½ teaspoon bicarbonate of soda
  • 1 tablespoon cocoa powder
  • 75 g (3 oz) plain dark chocolate chips

Whiz all the ingredients except the chocolate chips in a food processor until smooth, or beat in a large bowl. Stir in the chocolate chips, and bring the mixture together with your hands to form a ball.

Dust a surface lightly with rice flour. On this, divide the mixture into 30 balls, then place them, well spaced apart, on lined baking sheets. Press them down gently with the back of a fork.

Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 8–10 minutes. Remove the cookies from the oven, leave for a few minutes to harden, then transfer to a wire rack to cool.
