Glazed Baby Carrots

  • 50 g (2 oz) butter
  • 1 kg (2 lb) whole baby carrots, or young ones quartered lengthways
  • generous pinch of sugar
  • juice of 1 orange
  • salt and pepper
  • parsley, roughly chopped, to garnish

Melt the butter in a saucepan, add the carrots and sugar and season with salt and pepper.

Pour in just enough water to cover the carrots and cook gently, uncovered, for 10–12 minutes or until the carrots are tender and the liquid has evaporated. As the water evaporates, add the orange juice. Serve garnished with the chopped parsley.
