Gingered Sesame Fruit Kebabs

  • 1 tablespoon rapeseed oil
  • 75 g (3 oz) light muscovado sugar
  • juice of 1 lime
  • pinch of nutmeg
  • 2 tablespoons chopped mint
  • 3 knobs of stem ginger, diced
  • 1 mango, peeled, stoned and cut into chunks
  • 2 kiwifruit, peeled and cut into chunks
  • 10–12 strawberries, hulled
  • 2 tablespoons sesame seeds
  • 2 tablespoons stem ginger syrup
  • 200 g (7 oz) Greek yogurt
  • Soak 8 wooden skewers in water for 10 minutes.
  • Meanwhile, mix together the oil, sugar, lime juice, nutmeg, mint and ginger in a bowl and stir until the sugar has dissolved.
  • Thread the fruit on to the skewers and brush with the syrup. Sprinkle with the sesame seeds.
  • Place on a baking sheet and cook under a preheated medium-hot grill for 6–8 minutes, turning once, until turning golden.
  • Mix together the ginger syrup and yogurt in a bowl and serve with the kebabs.
