Ginger Peaches & Vanilla Cream

  • 2 fresh peaches, halved and stoned
  • 1 piece stem ginger, finely chopped
  • 2 tablespoons ginger syrup
  • 3 ginger biscuits, roughly crushed
  • 25 g (1 oz) unsalted butter, melted
  • 4 tablespoons double cream
  • seeds of 1 vanilla pod
  • 1 tablespoon icing sugar

Put the peaches, cut side, up in an ovenproof dish. Mix together the ginger, syrup, biscuits and butter and spoon over the peaches.

Cook in a preheated oven, 200°C (400°F), Gas Mark 6, for 12–15 minutes until bubbling and the peaches are tender.

Whip together the cream with the vanilla seeds and icing sugar until just stiff and serve with the peaches.
