Ginger and Treacle Sponge

  • 175 g (6 oz) golden syrup
  • 125 g (4 oz) soft butter or margarine, plus extra for greasing
  • 125 g (4 oz) caster sugar
  • 2 eggs
  • 125 g (4 oz) self-raising flour
  • 1 1/2 teaspoons ground ginger
  • single cream or custard, to serve
  • Preheat the oven to 180°C (350°F), Gas Mark 4, and grease an ovenproof dish. Pour the golden syrup into the bottom of the dish.
  • Place all of the remaining ingredients in a bowl and beat until smooth, then pour it over the golden syrup. Smooth with a spatula to make an even layer, then cook in the preheated oven for 20–25 minutes, until risen and golden.
  • Serve drizzled with cream or warmed custard.
