Ginger and Coriander Turkey Burgers

  • 450 g (14 1/2 oz) minced turkey
  • 1 tablespoon finely grated fresh root ginger
  • 3 tablespoons finely chopped fresh coriander
  • 50 g (2 oz) fresh breadcrumbs
  • 2 teaspoons dark soy sauce
  • 2 tablespoons lightly beaten egg
  • 2 tablespoons vegetable oil
  • black pepper
  • 4 tablespoons chilli jam
  • 4 large or 8 small bread rolls, split and griddled
  • 4–8 lettuce leaves
  • Place the turkey in a large bowl with the ginger, coriander, breadcrumbs and soy sauce. Season with black pepper and add the egg, mixing well to combine. Form into 4 large or 8 small burgers.
  • Heat the oil in a large nonstick frying pan and fry the burgers for 3–4 minutes on each side, until cooked through and golden.
  • Spread the chilli jam on to the bottom halves of the griddled rolls and top with the lettuce leaves. Place a burger on top of each and cover with the lid. Serve immediately.
