Garlic Potatoes

  • 4 tablespoons olive oil
  • 750 g (1½ lb) waxy potatoes, such as Maris Piper, peeled and thickly sliced
  • 2 garlic cloves, finely chopped
  • salt and pepper
  • chopped parsley, to garnish

Heat the oil in a large, heavy-based frying pan over a medium-high heat, add the potato slices, season with salt and pepper and cook for 5 minutes until starting to turn golden.

Reduce the heat and cook for a further 20 minutes, turning occasionally, until tender and golden all over. Scatter over the garlic and continue to cook for a couple of minutes. Serve scattered with chopped parsley.
