Meals and Courses

  • 4 slices of bread such as ciabatta, sourdough, French bread or pitta
  • 2–3 garlic cloves, peeled and halved
  • 125 ml (4 fl oz) olive oil
  • a little chopped flat leaf parsley (optional)
  • salt

Toast the bread on both sides under a preheated medium grill until golden. While the bread is still warm, rub one side with the cut sides of the garlic.

Put the warm toasted bread on a plate and drizzle 2 tablespoons of the olive oil over each slice. Sprinkle with salt and a little chopped parsley, if liked, and serve as a starter, snack or with any pasta dish or salad.
