Garlic & Caramelized Onion Bhajis

  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 garlic cloves, sliced
  • 1 teaspoon cumin seeds
  • 2 tablespoons chopped coriander
  • 200 g (7 oz) chickpea/gram flour
  • 1 teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • 250 ml (8 fl oz) water

Heat half the oil in a nonstick frying pan, add the onion, garlic and cumin and fry for 5–6 minutes until golden and softened. Stir through the coriander.

Meanwhile, mix together the flour, bicarbonate of soda, salt and measurement water in a bowl and set aside for 10 minutes, then stir it into the onion mixture.

Heat a little of the remaining oil in the frying pan and add spoonfuls of the mix, frying for 2–3 minutes, turning halfway through cooking. Cook the remaining mix in the same way.
