Fruity Potato Salad

  • 300 g (10 oz) new potatoes, scrubbed
  • 2 oranges, segmented
  • 2 red dessert apples, cored and roughly chopped
  • 100 g (3 1/2 oz) green and red seedless grapes
  • 2 celery stalks, thickly sliced
  • 6 spring onions, sliced
  • 4 large gherkins, roughly chopped
  • 6 tablespoons mayonnaise
  • juice of 1 lemon
  • 1 teaspoon clear honey
  • 1 tablespoon wholegrain mustard
  • 3 tablespoons each of finely chopped dill and chives
  • salt and pepper
  • First make the dressing. Mix together all the ingredients in a bowl and season to taste.
  • Cook the potatoes in boiling salted water for about 15–20 minutes until just tender. Drain and, when just cool enough to handle, cut into halves or quarters if quite large.
  • Place the potatoes in a mixing bowl with the remaining salad ingredients. Pour on the dressing and toss gently to mix well. Chill the salad until ready to serve.
