Fruity Mango Flapjacks

prep 10 mins, plus cooling cook 30 mins
  • 100 g (3½ oz) soft light brown sugar
  • 150 g (5 oz) butter
  • 2 tablespoons golden syrup
  • 200 g (7 oz) millet flakes
  • 2 tablespoons mixed seeds, such as pumpkin and sunflower
  • 75 g (3 oz) dried mango, roughly chopped

Place the sugar, butter and syrup in a heavy-based saucepan and heat until melted, then stir in the remaining ingredients.

Spoon the mixture into a 28 x 18 cm (11 x 7 inch) nonstick baking tin, press down lightly and place in a preheated oven, 150°C (300°F), Gas Mark 2, for 30 minutes.

Mark into 12 pieces, then cool before removing from the tin. Cut or break into 12 pieces once cooled.
