Frozen Fruit Pudding

  • 500 g (1 lb) mixed frozen fruit
  • 175 g (6 oz) caster sugar
  • 125 g (4 oz) butter or margarine, softened
  • 2 eggs
  • 125 g (4 oz) self-raising flour
  • vanilla ice cream, to serve (optional)
  • Tip the frozen fruits into a buttered 20 x 25 cm (8 x 10 inch) shallow ovenproof dish with 50 g (2 oz) of the sugar.
  • Place the remaining sugar, butter or margarine, eggs and flour in a bowl and beat together until smooth. Spoon the mixture over the frozen fruits and smooth down evenly. Bake in a preheated oven, 200˚C (400˚F), Gas Mark 6, for 20–25 minutes until risen and golden, then serve in bowls with vanilla ice cream, if desired.
