Fried Steak with Green Peppercorn Sauce

  • 2 tablespoons olive oil
  • 4 feather steaks, approximately 125 g (4 oz) each
  • 25 g (1 oz) butter
  • 125 ml (4 fl oz) single cream
  • 2 teaspoons green peppercorns in water, drained
  • salt and pepper
  • green salad
  • crusty bread or chips
  • Heat the oil in a large nonstick frying pan and fry the steaks for 1–3 minutes on each side, depending on how you like your steak. Season to taste with salt and pepper, remove the steaks from the pan and transfer to a warm ovenproof dish to rest.
  • Add the butter, cream and peppercorns to the pan, and bubble over a medium-low heat for 1–2 minutes, scraping the pan to loosen any tasty bits.
  • Serve the steaks drizzled with the sauce, accompanied by green salad and bread or chips.
