  • 3 tablespoons plain flour
  • 150 g (5 oz) dried white breadcrumbs
  • 1 egg, beaten
  • 300 g (10 oz) Manchego cheese, rind removed and cut into 1 cm (½ inch) wedges
  • 5 tablespoons olive oil
  • sweet paprika, for sprinkling (optional)
  • salt and pepper

Place the flour and breadcrumbs on separate plates and the egg in a shallow bowl. Season the flour with salt and pepper and stir together. Dip the cheese wedges in the flour, then in the egg and finally in the breadcrumbs, shaking off any excess each time.

Heat a little of the oil in a frying pan, add the wedges in batches and fry for about 1 minute on each side until golden. Remove from the pan, drain on kitchen paper and keep warm. Wipe out the pan, discarding any breadcrumbs, and repeat with the remaining wedges.

Serve the wedges hot, sprinkled with paprika, if liked.
