Fresh Herb Pasta Salad

  • 200 g (7 oz) orzo
  • 5 tablespoons extra virgin olive oil
  • juice of 1/2 lemon
  • 2 spring onions, chopped
  • 1/4 cucumber, finely chopped
  • 150 g (5 oz) tomatoes, chopped
  • large handful of flat-leaf parsley, chopped
  • small handful of mint leaves, chopped
  • salt and pepper
  • Cook the pasta in a large saucepan of salted boiling water according to the pack instructions. Drain, then cool under cold running water and drain again.
  • Tip into a serving dish and stir in the oil and lemon juice and season well. Toss through the remaining ingredients and serve.
