Fresh Fruit Salad

  • 1 small, ripe pineapple
  • 1 small, ripe melon
  • 250 g (8 oz) strawberries
  • 150 g (5 oz) seedless grapes
  • 2 tablespoons apple or elderflower cordial (optional)
  • Cut the skin away from the pineapple, then slice into quarters and remove the hard core. Cut into bite-sized chunks and place in a bowl, reserving any juices.
  • Slice the melon in half and use a spoon to remove the seeds. Cut in half again and remove the skin from the flesh. Cut into bite-sized pieces and add to the pineapple, again reserving any juices.
  • Add the strawberries and grapes to the prepared fruit, cutting in half if necessary.
  • Mix the reserved juices with the cordial, if using, and drizzle over the fruit. Toss very gently to combine, then serve immediately.
