Frankfurter and Courgette Frittata

  • 2 tablespoons olive oil
  • 1 large courgette, cut into small chunks
  • 6 frankfurters, chopped
  • 6 eggs, beaten
  • 100 g (3 1/2 oz) feta cheese, crumbled
  • pepper
  • salad, to serve
  • Heat the oil in a medium nonstick frying pan. Add the courgette and frankfurters and fry, stirring, for 3 minutes until the courgette has softened.
  • Season the eggs with pepper (there is no need to add salt as the feta is quite salty). Pour into the pan and cook, stirring gently, until the mixture starts to set. Scatter over the feta cheese.
  • Place the pan under a preheated hot grill keeping the handle away from the heat, and cook for 1 minute until the top is set. Cut into wedges and serve with salad.
