Flash-in-the-Pan Ratatouille

Ingredients
  • 100 ml (3 1/2 fl oz) olive oil
  • 2 onions, chopped
  • 1 aubergine, cut into 1.5 cm (3/4 in) cubes
  • 2 large courgettes, cut into 1.5 cm (3/4 in) cubes
  • 1 red pepper, deseeded and cut into 1.5 cm (3/4 in) pieces
  • 1 yellow pepper, deseeded and cut into 1.5 cm (3/4 in) pieces
  • 2 cloves garlic, crushed
  • 1 x 400 g (13 oz) can chopped tomatoes
  • 2–3 tablespoons balsamic vinegar
  • 1 teaspoon soft brown sugar
  • 10–12 black olives, pitted
  • salt and pepper
  • torn basil leaves, to garnish
Directions
  • Heat the oil in a large pan until very hot and stir-fry all of the vegetables, except the tomatoes, for a few minutes.
  • Add the tomatoes, balsamic vinegar and sugar, season and stir well. Cover tightly and simmer for 15 minutes until the vegetables are cooked.
  • Remove from the heat, scatter over the olives and torn basil leaves and serve.
