Fisherman's Sardine and Potato Salad

  • 3 tablespoons mayonnaise
  • 2 tablespoons tartare sauce
  • 2 teaspoons lemon juice
  • 2 tablespoons chopped chives or parsley (optional)
  • 625 g (1 1/4 lb) cooked potatoes, diced
  • 2 x 120 g (3 3/4 oz) cans sardines, drained and flaked
  • salt and pepper
  • In a large bowl, mix the mayonnaise, tartare sauce, lemon juice and chopped herbs and season with a pinch each of salt and pepper.
  • Fold through the potatoes and flaked sardines and divide between serving plates.
