  • 2 fillet steaks, about 150 g (5 oz) each
  • 15 g (1/2 oz) butter
  • salt and pepper
  • mashed potatoes, to serve (optional)
  • 2 tablespoons olive oil
  • 1 red onion, thinly sliced
  • 1/2 red cabbage, thinly shredded
  • 3 tablespoons balsamic vinegar
  • 4 tablespoons soft brown sugar
  • 1 teaspoon allspice
  • 2 tablespoons redcurrant jelly
  • 125 g (4 oz) blackberries
  • To make the red cabbage, heat the oil in a saucepan, add the onion and cook over a medium heat for 3 minutes, then add the red cabbage and cook for a further 3 minutes, stirring continuously.
  • Add the vinegar, sugar and allspice, cover and cook over a very low heat for 10 minutes until the cabbage is soft and tender, adding the redcurrant jelly and blackberries for the final 3 minutes.
  • Meanwhile, season the steaks well. Heat the butter in a frying pan, add the steaks and cook over a high heat for 2–3 minutes on each side until browned and cooked to your liking.
  • Spoon the red cabbage on to 2 warm serving plates and top with the steaks. Serve with mashed potatoes, if liked.
