Feta, Fresh Herb & Rocket Frittata

  • 4 eggs, beaten
  • 2 tablespoons chopped herbs, such as chives, chervil and parsley
  • 1 tablespoon double cream
  • 1 tablespoon olive oil
  • 1 small red onion, finely sliced
  • ½ red pepper, deseeded and finely sliced
  • 100 g (3½ oz) feta cheese
  • large handful of rocket leaves
  • salt and black pepper

Beat together the eggs, herbs and cream.

Heat the oil in a nonstick frying pan with an ovenproof handle, add the onion and pepper and fry for 3–4 minutes until just softened. Pour in the egg mixture and cook for about 3 minutes until almost set.

Crumble over the feta, then cook under a preheated hot grill until golden. Top with the rocket and serve.
