Fatoush Salad

  • 1 pitta bread, torn into small pieces
  • 6 plum tomatoes, deseeded and roughly chopped
  • 1/2 cucumber, peeled and roughly chopped
  • 10 radishes, sliced
  • 1 red onion, roughly chopped
  • 1 small little gem lettuce, leaves separated
  • small handful of fresh mint leaves
  • 200 ml (7 fl oz) olive oil
  • juice of 3 lemons
  • 1 garlic clove, crushed
  • 2 teaspoons sumac (or 1/2 teaspoons ground cumin)
  • salt and pepper
  • First make the dressing. Whisk the olive oil, lemon juice, garlic and sumac together in a bowl. Season to taste.
  • To make the salad, combine the pitta pieces, tomatoes, cucumber, radishes, red onion, lettuce leaves and mint leaves in a large bowl.
  • When ready to serve, pour the dressing over the salad and gently mix together to coat the salad evenly.
