Fast Fruit Brûlée

  • 350 g (11 1/2 oz) shop-bought fruit compote, such as summer fruit
  • 500 g (1 lb) Greek yogurt
  • 75 g (3 oz) demerara sugar
  • Spoon the fruit compote into 4 x 150 ml (1/4 pint) ramekins. Spoon the yogurt over the compote, then sprinkle over the sugar. Place on a baking sheet.
  • Cook under a preheated hot grill for 4–5 minutes or until the sugar is brown and bubbling. Leave to cool for 3–4 minutes before serving.
