To make the sauce, place all the ingredients in a small saucepan and simmer for 10 minutes.
Meanwhile, place all the falafel ingredients except the oil in a large bowl and mash together with a fork. Alternatively, place the ingredients in a food processor and blitz until smooth. Using wet hands, shape the mixture into small balls and flatten slightly.
Heat the vegetable oil in a frying pan and cook the falafel for 5–7 minutes until golden.
