Special Diet

  • 500 g (1 lb) strawberries, hulled and chopped
  • 1 teaspoon ginger cordial
  • 400 ml (14 fl oz) double cream
  • 3 ready-made meringue nests, lightly crushed
  • 2 pieces of preserved stem ginger, diced
  • 1 tablespoon shredded mint
  • Toss the strawberries in a bowl with the ginger cordial.
  • Whip the cream to soft peaks, then stir in the strawberries, crushed meringue, ginger and half the shredded mint.
  • Divide between 4 glasses and sprinkle over the remaining shredded mint to serve.
