Easy Blackberry Fool

  • 300 g (10 oz) blackberries, plus extra to decorate
  • 50 g (2 oz) icing sugar
  • 1 tablespoon lemon juice
  • 250 g (8 oz) fromage frais
  • 200 g (7 oz) fat-free Greek yogurt
  • Place the blackberries, icing sugar and lemon juice in a food processor or blender and blend to a purée, then press through a sieve into a large bowl to remove the pips. Beat in the fromage frais and yogurt.
  • Spoon into 4 glass dishes and chill for 10 minutes. Decorate with extra blackberries before serving.
