  • 500 g (1 lb) Peking duck
  • 200 g (7 oz) cooked soya beans
  • 1 cucumber, finely sliced
  • 5 spring onions, very finely sliced, plus extra to garnish
  • Sichuan pepper, to garnish
  • 2 tablespoons hoisin sauce
  • 4 tablespoons soy sauce
  • juice of 1 lime

Shred the duck and mix it with the soya beans, cucumber and spring onions in a large salad bowl.

Make the dressing by whisking the hoisin and soy sauces with the lime juice in a small bowl. Drizzle the mixture over the duck salad and toss gently to combine. Garnish with some spring onion and a sprinkling of Sichuan pepper and serve at once.
