Duck and Lettuce Wraps

  • 6 spring onions
  • 2 cooked duck legs
  • 2 Little Gem lettuces
  • ½ cucumber, cut into thin strips
  • 4–6 tablespoons gluten-free hoisin sauce
  • 2 tablespoons roasted peanuts, roughly chopped
  • Cut the spring onions into very long thin strips and place in a bowl of iced water for 4–5 minutes.
  • Shred the meat from the duck legs.
  • Separate the lettuce leaves and divide the shredded duck between them.
  • Garnish each one with cucumber and spring onion, spoon over a little hoisin sauce and sprinkle with the chopped peanuts to serve.
