3–4 large American-style pickles (gherkins), sliced

125 g (4 oz) mixed salad leaves
barbecue sauce (optional)
Place the minced beef in a bowl with the onion, breadcrumbs, garlic powder and egg. Season to taste with salt and pepper, mix to combine, then form into 8 thin burgers.
Heat the oil in a large nonstick frying pan and cook the burgers for 3–4 minutes on each side, until cooked and golden.
Arrange mixed salad leaves on the bottom half of each bread roll and top with sliced pickles, a burger, a slice of cheese, a second burger, barbecue sauce, if desired, and another layer of pickles, before replacing the lids.
