Double Whammy Beef Burgers with Pickles

  • 450 g (14 1/2 oz) minced beef
  • 1 onion, finely chopped
  • 50 g (2 oz) fresh breadcrumbs
  • 1/2 teaspoon dried garlic powder
  • 1 egg, lightly beaten
  • 2 tablespoons olive or vegetable oil
  • 4 large bread rolls
  • 4 thin slices of Cheddar cheese
  • 3–4 large American-style pickles (gherkins), sliced
  • salt and pepper
  • 125 g (4 oz) mixed salad leaves
  • barbecue sauce (optional)
  • Place the minced beef in a bowl with the onion, breadcrumbs, garlic powder and egg. Season to taste with salt and pepper, mix to combine, then form into 8 thin burgers.
  • Heat the oil in a large nonstick frying pan and cook the burgers for 3–4 minutes on each side, until cooked and golden.
  • Arrange mixed salad leaves on the bottom half of each bread roll and top with sliced pickles, a burger, a slice of cheese, a second burger, barbecue sauce, if desired, and another layer of pickles, before replacing the lids.
