Date and Amaretti Tiramisu

  • 6 dates, pitted and roughly chopped
  • 100 ml (3½ fl oz) strong coffee
  • 60 ml (2½ fl oz) Amaretto liqueur
  • 2 eggs, separated
  • 65 g (2 ½ oz) caster sugar
  • 150 g (5 oz) mascarpone cheese
  • 100 g (3½ oz) ricotta cheese
  • 150 ml (¼ pint) whipping cream, whipped to soft peaks
  • 125 g (4 oz) amaretti biscuits, lightly crushed
  • 15 g (½ oz) cocoa powder
  • Put the dates in a saucepan with the coffee and bring to the boil, then remove from the heat, stir in the Amaretto liqueur and leave to cool for 15 minutes.
  • Whisk the egg whites and 2 tablespoons of the caster sugar to stiff peaks.
  • In a separate bowl whisk the remaining sugar with the mascarpone, ricotta and egg yolks, then fold in the whipped cream. Finally, fold in the egg whites.
  • Toss the amaretti biscuits with the dates, then spoon one-half of this mixture into 4 glasses. Sift over one-third of the cocoa powder.
  • Top with one-half of the cream mixture, then repeat the layers with the remaining ingredients.
  • Finish off with a sifting of cocoa powder. Chill until ready to serve.
