  • ½ head of white cabbage, thinly sliced
  • 2 carrots, thinly sliced
  • 75 g (3 oz) radishes, thinly sliced
  • 2 spring onions, thinly sliced
  • 1 bunch of coriander, chopped
  • 1 teaspoon cumin seeds
  • 1 red chilli, deseeded, if liked, and finely chopped
  • grated rind and juice of 2 limes
  • 2 tablespoons olive oil
  • salt and pepper

Make the dressing by mixing together all the ingredients in a bowl. Season well.

Place all the remaining ingredients in a serving bowl, then toss together with the dressing. Leave to stand for 5 minutes before serving.
