Crispy Lemon Prawn Skewers

  • 300 g (10 oz) cooked peeled large prawns
  • 3 tablespoons olive oil
  • 100 g (3 1/2 oz) dried breadcrumbs
  • 1 garlic clove, crushed
  • finely grated rind of 1 lemon
  • handful of oregano leaves, finely chopped
  • salt and pepper
  • lemon wedges, to serve
  • Pat the prawns dry with kitchen paper, then season and rub all over with the oil. Thread on to metal skewers.
  • Mix together the remaining ingredients and place on a plate. Roll the skewered prawns in the breadcrumb mixture to coat all over. Cook under a hot grill for 2 minutes. Turn over and cook for a further 1–2 minutes until golden, then serve with lemon wedges.
