Creamy Fish Pie

  • 350 g (11 1/2 oz) cheese pasta sauce
  • 350 g (11 1/2 oz) mixed fish (such as salmon, haddock and pollack), cut into chunks
  • 125 g (4 oz) frozen peeled prawns (optional)
  • 200 g (7 oz) mixture of frozen peas and sweetcorn
  • 2 tablespoons chopped parsley or chives
  • 500 g (1 lb) leftover mashed potato
  • 100 g (3 1/2 oz) grated cheese (such as Cheddar cheese or Red Leicester)
  • sliced green beans or salad, to serve
  • Place the cheese sauce in a saucepan and heat gently until almost bubbling. Stir through the mixed fish for 2–3 minutes until almost cooked through.
  • Stir in the frozen prawns, if using, with the vegetables and bring to almost boiling point. Remove from the heat and stir through the herbs.
  • Scrape the pie filling into a medium-sized ovenproof dish, then top evenly with the mashed potato and sprinkle with the grated cheese.
  • Bake in a preheated oven, 200˚C (400˚F), Gas Mark 7, for about 20 minutes until bubbling and golden. Serve immediately with sliced green beans or salad.
