Special Diet

  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 4 courgettes, cut into matchsticks
  • 2 celery sticks, cut into matchsticks
  • 250 g (8 oz) soft cheese with garlic
  • 100 g (3½ oz) walnut pieces
  • salt and pepper

Heat the oil in a large frying pan, add the onion and cook for 5 minutes until soft. Add the courgettes and celery and cook for 4–5 minutes until soft and starting to brown.

Add the cheese and cook for 2–3 minutes until melted. Stir in the walnuts, season to taste with salt and pepper and serve immediately.
