  • 325 ml (11 fl oz) water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 3 tablespoons dried pomegranate seeds
  • 125 g (4 oz) buckwheat flour, plus extra for dusting
  • 375 g (12 oz) strong white bread flour
  • 1 tablespoon light muscovado sugar
  • 1¼ teaspoons fast-action dried yeast
  • 75 g (3 oz) dried cranberries

Lift the bread pan out of the machine and fit the blade. Put the ingredients, except the dried cranberries, in the pan, following the order specified in the manual.

Fit the pan into the machine and close the lid. Set to a 750 g (1½ lb) loaf size on the basic white programme. Select your preferred crust setting. Add the dried cranberries when the machine beeps.

At the end of the programme lift the pan out of the machine and shake the bread out on to a wire rack. Dust the top lightly with a little extra buckwheat flour and leave to cool. Slice and serve with cream cheese and fruit compote, if liked.
