Crab Linguine

  • 450 g (14 1/2 oz) linguine
  • 125 ml (4 fl oz) olive oil
  • 2 garlic cloves, crushed
  • 1 red chilli, deseeded and finely diced
  • grated rind and juice of 1 lemon
  • 250 g (8 oz) white crab meat
  • 2 tablespoons chopped parsley
  • Cook the linguine in a large saucepan of boiling water according to the packet instructions, until ‘al dente’.
  • Meanwhile, in another large saucepan, heat the olive oil and cook the garlic, chilli and lemon rind over a low heat for 3–4 minutes.
  • Drain the pasta and add it to the olive oil pan along with the lemon juice, crab meat and the chopped parsley. Toss together gently to warm the crab through, and then serve.
