Couscous with Cinnamon & Milk

Ingredients
  • 500 g (1 lb) fine-grain couscous
  • 150 g (5 oz) butter
  • 1 tablespoon groundnut oil
  • 1 tablespoon cinnamon, to garnish
  • 1 tablespoon caster sugar, plus extra to serve
  • 1 litre (1¾ pints) milk, to accompany
Directions

Prepare the couscous following the method on pages 12–13, but incorporating the 150 g (5 oz) butter.

Arrange on a serving dish in a cone shape, garnished with the cinnamon and sugar. Serve with milk and extra sugar, to taste.
