Courgettes with Tomatoes

  • 3 tablespoons olive oil
  • 1 onion, finely sliced
  • 3 tomatoes, diced
  • 3 garlic cloves
  • 1 tablespoon paprika
  • 250 ml (8 fl oz) water
  • 1 kg (2 lb) courgettes, trimmed and cut into rounds, then halved or quartered
  • salt

Heat the oil in a heavy-based casserole, add the onion and tomatoes and soften for 5 minutes. Add the garlic, paprika and salt to taste and pour in the water.

When the sauce is simmering, add the courgettes and cook for 15 minutes.

Remove from the heat once the sauce has reduced.
