Coronation Chicken

Ingredients
  • 150 ml (1/4 pint) mayonnaise
  • 1–2 teaspoons medium curry paste
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh coriander
  • 375 g (12 oz) cooked chicken, chopped
  • 125 g (4 oz) seedless grapes, halved
  • 2 tablespoons raisins
  • salt and pepper
  • watercress
  • crusty bread
Directions
  • Mix together the mayonnaise, curry paste, lemon juice and half the coriander. Season with salt and pepper.
  • Lightly stir in the chicken, grapes and raisins. Sprinkle with the remaining coriander and serve with watercress and crusty bread.
