Coronation Chicken with Avocado Salad

Ingredients
  • 150 g (5 oz) mayonnaise
  • 1 1/2 teaspoons mild curry powder
  • 1 teaspoon ground allspice
  • 1 red chilli, deseeded and diced
  • juice of 1/2 lime
  • 6 tablespoons mango chutney
  • 6 tablespoons Greek yogurt
  • 550 g (1 lb 2 oz) shop-bought ready-cooked chicken, shredded
  • 1/2 iceburg lettuce, leaves torn
  • 30 g (1 oz) watercress
  • 2 avocados, peeled and sliced
  • 2 large beef tomatoes, sliced
  • 2 tablespoons toasted flaked almonds
Directions
  • Mix together the mayonnaise, curry powder, allspice, chilli, lime juice, chutney and yogurt in a large bowl, then stir in the chicken.
  • Place the lettuce on a serving plate, then top with the watercress, avocados and tomatoes.
  • Spoon over the chicken and serve sprinkled with the almonds.
