Cold-Busting Chilli Beef Burgers

  • 400 g (13 oz) minced beef
  • ½ small red onion, finely chopped
  • 1 green chilli, deseeded and chopped
  • 2 tablespoons mixed chopped herbs
  • 1 egg, lightly beaten
  • 2 teaspoons Mexican spice blend
  • 1 teaspoon Tabasco sauce
  • 50 g (2 oz) fresh breadcrumbs
  • salt and pepper
  • 2 tablespoons sunflower oil
  • wholegrain burger buns
  • selection of toppings, such as salsa, avocado and lettuce
  • Combine all the burger ingredients in a large bowl and mix well. Form into 4 large patties about 1.5 cm (¾ inch) thick.
  • Heat the oil in a large frying pan and cook the burgers over a medium heat for 8–12 minutes, turning once, until cooked to your liking.
  • Serve in the burger buns with a choice of toppings, as left.
