Cold Asian Summer Soba Noodle Salad

  • 625 g (1 1/4 lb) cooked soba noodles
  • 2 carrots, finely julienned
  • 6 spring onions, finely shredded
  • 1 red pepper, finely sliced
  • 4 tablespoons dark soy sauce
  • 3 tablespoons sesame oil
  • 1 tablespoon mirin
  • 1 tablespoon caster sugar
  • 1/2 teaspoon chilli oil
  • Place the soba noodles in a wide bowl with the carrots, spring onions and pepper.
  • In a separate bowl, mix together the soy sauce, sesame oil, mirin, sugar and chilli oil, then pour over the noodle mixture.
  • Toss to mix well and serve chilled or at room temperature.
