Coconut Kisses

Ingredients
  • 50 g (2 oz) unsalted butter, melted, plus extra for greasing
  • 200 g (7 oz) desiccated coconut
  • 50 g (2 oz) caster sugar
  • 1 egg, beaten
Directions
  • Grease a baking sheet. Place the coconut, sugar and melted butter in a bowl and mix together. Stir in the egg and mix well.
  • Using your hands, take walnut-sized pieces of the mixture and shape them into little pyramids. Place on the prepared baking sheet and bake in a preheated oven, 150°C (300°F), Gas Mark 2, for 15 minutes, until golden.
  • Leave to cool on a wire rack.
