50 g (2 oz) unsalted butter, melted, plus extra for greasing
200 g (7 oz) desiccated coconut
50 g (2 oz) caster sugar
1 egg, beaten
Grease a baking sheet. Place the coconut, sugar and melted butter in a bowl and mix together. Stir in the egg and mix well.
Using your hands, take walnut-sized pieces of the mixture and shape them into little pyramids. Place on the prepared baking sheet and bake in a preheated oven, 150°C (300°F), Gas Mark 2, for 15 minutes, until golden.
