Citrus, Chilli & Fresh Thyme Oil

prep 5 mins, plus infusing
  • rind of 1 lemon, cut into long, thin strips
  • rind of 1 lime, cut into long, thin strips
  • 1 large red chilli, deseeded and sliced
  • 6 thyme sprigs, bruised
  • 1 teaspoon black peppercorns, lightly crushed
  • 600 ml (1 pint) extra virgin olive oil
  • salt

Place the lemon and lime rinds in a bowl and add the chilli, thyme sprigs, peppercorns and a little salt. Pour in the oil, cover and leave to infuse in a cool, dark place for 3—4 days.

Strain the oil through a fine sieve into a bottle and use as required.
