Cinnamon Sugar Muffins

  • 200 g (7 oz) plain flour
  • 2 teaspoons baking powder
  • 1½ teaspoons ground cinnamon
  • 50 g (2 oz) bran
  • 100 g (3½ oz) caster sugar
  • 3 tablespoons demerara sugar
  • 2 large eggs
  • 1 ripe banana, mashed
  • 50 g (2 oz) butter, melted
  • 175 ml (6 fl oz) buttermilk
  • Line a 12-hole muffin tin with paper cases.
  • Sift the flour, baking powder and ½ teaspoon of the cinnamon into a large bowl. Stir in the bran and caster sugar. In a separate bowl, combine the remaining cinnamon with the demerara sugar.
  • Put the eggs, banana, butter and buttermilk in a jug or bowl and beat well. Pour over the dry ingredients and mix until barely combined.
  • Spoon the batter into the prepared tin and sprinkle with the cinnamon sugar. Bake in a preheated oven, 180˚C (350˚F), Gas Mark 4, for 18–20 minutes, until risen and firm to the touch.
  • Transfer the muffins to wire racks and serve warm.
